These are the latest results from CatSpring Yaupon, one of December’s suppliers. CatSpring is founded and owned by Abianne Falla, a member of the Chickasaw nation, so these milestones would be no surprise under normal circumstances. What makes this achievement extraordinary, though, is they accomplished it in a part of Texas where datacenter development is actively depleting biodiversity, soil and water resources. Another of December’s suppliers, TX Brand Tea, is less than 10 miles from one of the largest datacenter developments in the country! Despite this, they have also shown a noticeable improvement in biodiversity and groundwater recharge since they started cultivating yaupon on the land.
While development threatens groundwater for millions of Texans, the yaupon industry is working hard to replenish it those resources while keeping those Texans caffeinated! And December is committed to working with suppliers doing the same on their home turf. For example, December sources Organic Vermont maple syrup from Starbuck Farm, a syrup maker established in 1811. Starbuck uses only traditional methods, including “high and late” harvesting on only large trees, without vacuum assistance that can damage tree health. They also work to remove invasive species, propagating endangered species, introducing pollinators, and regrading trail systems and drainages to promote watershed health.
Regeneratively grown ingredients also have higher nutritional value. For example, regenerative yaupon contains powerful antioxidant compounds. Caffeoylquinic acids (70% of yaupon's total polyphenolics) may activate cellular antioxidant pathways and reduce inflammation by inhibiting NF-κB signaling.
