Regenerative Organic, Shade-grown yaupon
December harvests Regenerative Organic Certified® yaupon in partnership with Native American-Owned CatSpring Yaupon farm and the fifth-generation Arledge Yaupon farm in Caldwell, TX. The harvest season begins each summer as new growth ripens to a smooth, sweet flavor in the shade of 100 year old oak trees, and it peaks in December as leaves reach their full maturity.
We select the highest quality yaupon leaves to pluck, wash and cure before they are traditionally roasted and ground for each batch of December Cold Brew. As shown in this Certificate of Analysis, our yaupon is free of heavy metals, synthetic chemicals, and other contaminants that commonly affect tea and coffee. With 2,000 acres now under harvest, December is expanding with a steady supply of the best Texas-grown energy.

Brewed with care
Each batch of December Dark Roast Yaupon Nitro Cold Brew begins with 400 pounds of fresh, dark roast yaupon loaded into our 800 gallon brew tank. The tank is held at a constant 48 °F for exactly 24 hours before the yaupon is removed and the brew is transferred to our mixing tank.

Infused with magic
We mix in a touch of organic cane sugar, maple syrup and a secret flavor formula. The brew is then transferred to the nitrogen tank for a 72-hour infusion. At the end of this five day process, the brew is canned or kegged and delivered to our amazing partners and customers.
